摘　　要："食品工程原理"是食品科学与工程专业的一门重要基础课,是学生从基础课程转向专业课程学习的桥梁与纽带。通过利用Blackboard平台,探讨了PBL教学模式在"食品工程原理"教学中的应用,认为基于Blackboard的PBL教学法能够充分调动学生学习的积极性,培养了学生的自主学习能力及创新能力,提高了教学质量,是值得推广的现代教学法。Principles of Food Engineering is an important professional basic course for food science and engineering. It is the bridge and link between the professional courses and basic courses. In this study,the blackboard network platform and PBL teaching method are applied in principles of food engineering. The teaching mode based on blackboard network and PBL teaching method can fully mobilize the enthusiasm of students for learning, cultivated students＇ independent learning ability and innovation ability. It should be popularized in modern teaching area.
