摘 要:目的为全国膳食营养调查提供肉类、禽蛋产品中胆固醇的含量。方法试样经加热冷凝回流、皂化、石油醚和乙醚混合液萃取、浓缩、定容后,用高效液相色谱法测定。结果畜禽肉、内脏中胆固醇含量为0.151~1.870g/kg,禽蛋中胆固醇为1.18~2.38g/kg。结论膳食营养调查肉蛋产品中胆固醇含量的检测采集能不断充实、更新现有膳食营养数据库,为深入开展科学研究提供数据支持,研究成果对于调整居民膳食结构、指导合理饮食有重大现实意义。Objective To determine the cholesterul in meet and eggs for nutrition survey of national dietary. Methods The sample was mixed and saponified in boiling water, reflux condensation, a mixture of petroleum ether and ether extrac- tion, concentration, after constant volume, HPLC method was used to detect the content. Results Livestock and poultry meat, offal cholesterol contents were in the range of 0. 151 - 1.87 g/kg, eggs cholesterol was 1.18 -2. 38 g/ kg. Conclusion Meat and egg products cholesterol testing can continue to enrich the collection of dietary surveys, updating existing dietary database to provide data support for further scientific research, research for the regulation of dietary struc- ture, guidance and reasonable diet has great practical significance.
