摘  要:为了掌握西门塔尔牛的生产性能,试验对内蒙古自治区通辽市20头舍饲栓系育肥的西门塔尔育肥牛牛肉中氨基酸和微量元素进行了分析。结果表明:鲜样中16种氨基酸总量为19.35%,必需氨基酸占8.16%,非必需氨基酸占11.19%。通过FAO/WHO模式评分,必需氨基酸的构成比例基本符合理想蛋白模式。风味氨基酸中,鲜味氨基酸和鲜甜味氨基酸占46.85%。所测15种矿物质元素中,有5种常量元素,常量元素含量较高,微量元素中铁和钙相对缺乏。说明酒糟育肥西门塔尔牛肉中氨基酸结构合理,矿物质元素较为丰富,属于比较优质的蛋白质食物。To grasp the productive performance of Simmental cattle, 20 Simmental cattle tied down in cowshed in Tongliao of Inner Mongolia were fattened and slaughtered. And then the contents of amino acids and trace elements in the beef were analyzed in the test. The result showed that 16 kinds of amino acids were detected in the fresh samples, thereinto, the gross amino aeids, essential amino acids (EAA) and non- es- sential amino acids (NEAA) account for 19.35%, 8.16% and 11.19%, respectively. By the FAO/WHO pattern scoring, the composition ratio of EAA composition was basically in line with the ideal protein mode through scoring based on FAO/WHO pattern. Fresh sweet tasty amino acids and amino acids accounted for 46.85% in the flavor amino acids. Fifteen kinds of mineral elements were detected in the test, and there was a high level of 5 kinds of macro - elements and a relative lack of iron and calcium. The results indicate that the structure of amino acids in the beef of Simmental cattle fattened with vinasse is reasonable, and the mineral elements are relatively abundant, and the beef belongs to the relatively high - quality protein food.
