Quality evaluation of pressed oil from four kinds of oilseeds

摘  要:以紫苏籽、亚麻籽、油菜籽和花生仁4种高含油油料为研究对象,将其在适宜的工艺条件下进行压榨和水化脱胶,对所得毛油及水化脱胶油的理化指标和卫生指标进行检测和分析比较。结果显示:经水化脱胶后菜籽油、紫苏籽油优于压榨四级菜籽油,接近压榨三级菜籽油国家标准(GB 1536—2004),亚麻籽油符合压榨一级亚麻籽油国家标准(GB/T 8235—2008),花生油符合压榨一级花生油国家标准(GB 1534—2003);4种压榨油的总砷、铅、黄曲霉毒素B1、苯并(a)芘含量均未检出(GB 2716—2005),农药残留未检出;4种压榨油富含不饱和脂肪酸,紫苏籽油和亚麻籽油富含α-亚麻酸;水化脱胶后,4种压榨油的植物甾醇含量均明显降低,维生素E含量略有降低。With four high oil content oilseeds as research objects, perilla seed, flaxseed, rapeseed and pea- nut were pressed and degummed under suitable process conditions. The physicochemical index and hygienic index of the crude oil and degummed oil by hydration obtained were detected and analyzed comparatively. The results showed that after degumming by hydration, rapeseed oil and perilla seed oil were bet- ter than fourth grade pressed rapeseed oil, close to third grade pressed rapeseed oil national standard( GB 1536-2004) ,flaxseed oil was accord with first grade pressed flaxseed oil national standard (GB/T 8235-2008), and peanut oil was accord with first grade pressed peanut oil national standard (GB 1534-2003 ). No total arsenic, lead, aflatoxin B1 and benzo (a) pyrene was detected ( GB 2716-2005 ), and no pesticide residue was detected. In addition, four kinds of pressed oils were rich in unsaturated fatty acids, and perilla seed oil and flaxseed oil were rich in alpha -linolenic acid. The phytosterol content in four kinds of pressed oils decreased significantly and vitamin E content reduced slightly after degumming by hydration.
