在脱脂乳中肠膜明串珠菌和嗜热链球菌混菌发酵的初步研究

摘　　要：用生长曲线和黏度变化的方法,对嗜热链球菌LS-11和肠膜明串珠菌LE-05在脱脂乳培养基中的混菌发酵进行了初步研究,同时还利用正交试验确定了二菌在脱脂乳培养基中的混菌发酵参数。结果表明,LS-11和LE-05在脱脂乳培养基中有较好的协同性,不仅能相互促进生长,还能相对提高培养基的黏度。其在脱脂乳培养基中的混菌发酵参数为:LS-11接种量1.5%,LE-05接种量1%,发酵温度33℃,蔗糖添加量9%。The mixed fermentation by the two strains of Str. thermophilus LS-11 and Leu. mesenteroides LE-05 in the fresh skim milk medium was studied by the method of growth curve and change on the viscosity. At the same time, the mixed fermentation parameters of the two bacteria in skim milk medium was determined by the orthogonal experiment. The experimental results showed that the two bacteria had good cooperativity, could promote the growth each other, and can relatively improve the viscosity of the medium in the two medium. The parameters of the two bacteria were： LS-11 Inoculation amount 1.5%, LE-05 Inoculation amount 1%, fermented temperature of 33 degrees celsius, sucrose content 9%.
