不同嫩度信阳毛尖的冲泡条件研究

摘　　要：为探索不同嫩度信阳毛尖最佳冲泡条件,以单芽、一芽一叶信阳毛尖为材料,采用3因素3水平正交试验对2个样品进行比较(不同茶水比1∶40、1∶50、1∶60;不同冲泡水温:80、90、100℃;不同冲泡时间4、5、6 min)。结果显示,单芽以茶水比1∶50、冲泡水温100℃、冲泡时间4 min最佳;一芽一叶以茶水比1∶60、冲泡水温90℃、冲泡时间4 min最佳。To explore the brewing conditions of Xinyang tea with different tenderness, a 3 factors and 3 levels orthogonal experiment（ratio of tea to water,1∶40, 1∶50, 1∶60; brewing temperature, 80 ℃, 90 ℃, 100 ℃; brewing time,4 min, 5 min,6 min） was applied using simple bud, one leaf and a bud Xinyang maojian tea as material. The results showed that the best brewing conditions of simple bud were ratio of tea to water 1∶50, temperature 100 ℃, brewing time 4 min, of one leaf and a bud is ratio of tea to water 1∶60, temperature 90 ℃, brewing time 4 min.
