摘 要:以大鲵胶原蛋白多肽粉为原料制得口服液,以感官评价和离心稳定性为指标,通过单因素和正交试验确定了口服液的最佳配方和杀菌条件。最佳配方为(质量分数):大鲵胶原蛋白多肽粉1%、蔗糖10%、柠檬酸0.3%、苹果汁2%、白葡萄汁2%、CMC-Na 0.07%、黄原胶0.06%和果胶0.04%。杀菌条件为:110℃、0.04 MPa和10 min。并对制得的大鲵胶原蛋白多肽口服液进行急性毒性试验,对其安全性进行初步评价,口服液无急性毒性。The Andrias davidianus collagen peptide powder was made into oral liquid. Taking sensory evaluation and centrifugal stability as indexes, single-factor and orthogonal experiments were used to optimize the Andrias davidianus collagen peptides oral liquid formula and sterilization condition selectively. The best formula was determined: the Andrias davidianus collagen peptide powder 1%, sucrose 10%, citric acid 0.3%, apple juice 2%, white grape juice 2%, CMC-Na 0.07%, xanthan 0.06% and pectin 0.04%. The optimal sterilization condition was 110 ℃, 0.04 MPa and 10 min. Acute toxicity test was done for studying the safety of the oral liquid. The research results of acute toxicity experiments showed that the Andris davidianus collagen peptides oral liquid had no acute toxicity.
