摘  要:以粳米为主要原料,辅以虫草培养基,通过双螺杆挤压技术制备富含虫草素的粳米复合米。选取虫草培养基含量、含水量、套筒温度、螺杆转速4个技术参数为主要因素,制得糊化度较低的富含虫草素的粳米复合米(简称虫草复合米),确定最佳参数。通过快速黏度仪(RVA)、差示量热扫描仪(DSC)等测得品质指标。最佳工艺参数为:虫草培养基含量30%、含水量50%、套筒温度80℃、螺杆转速250 r/min。检测数据显示虫草复合米的蛋白质、脂肪以及虫草素含量明显高于粳米。In this experiment, polished restructuring japonica rice was taken as the main raw material, supplemented by cordyceps culture medium, the restructuring japonica rice rich in cordycepin was prepared by a twin-screw extrusion techno logy. Select media content, moisture content, barrel temperature, screw speed as the main factors, the lower the degree of compound rice with cordycepin was obtainedand the optimal parameter were analyzed.Through rapid viscometer(RVA), diffe rential scanning calorimetry(DSC), the quality parameters were measured. And the optimal parameters were : cordyceps culture medium content 30%, water content 50%, barrel temperature 80 ℃, screw speed 250 r / min.The data showed that protein,fat and cordycepin content was significantly higher than those of polished japonica rice.
