摘 要:为脱除猪油中胆固醇、提高猪油品质,研究以猪油为原料,选择β-环糊精包合法、硅胶吸附法和分子蒸馏法对猪油进行胆固醇脱除,分析了3种方法脱除胆固醇效果和对猪油酸值、过氧化值的影响。结果表明,β-环糊精包合法优于另外两种方法。然后对β-环糊精脱除猪油中胆固醇的工艺条件进行优化,以胆固醇脱除率为指标,考察β-环糊精添加量、水油比、搅拌时间对胆固醇脱除率的影响,通过单因素实验和响应面实验分析得到β-环糊精脱除猪油中胆固醇最佳工艺条件为β-环糊精添加量2.8%、水油比1.2∶1、搅拌时间41 min、搅拌温度50℃、搅拌速度1 000 r/min,在最佳工艺条件下胆固醇脱除率为67.54%。回收β-环糊精重复利用5次胆固醇脱除率为61.9%,仍具有很高的脱除效率。In order to remove cholesterol from lard and improve the quality of lard,the methods of β-cyclodextrin inclusion,silica gel adsorption and molecular distillation were selected to remove cholesterol from lard,and the removal efficiency of cholesterol and effects of the three methods on the acid value and peroxide value of lard were analyzed. The results indicated that β-cyclodextrin inclusion method was better than the other two methods. Then the removal conditions of cholesterol from lard by β-cyclodextrin inclusion method were optimized. With the removal rate of cholesterol as index,the effects of dosage of β-cyclodextrin,ratio of water to lard and stirring time on the removal rate of cholesterol were investigated. The removal conditions of cholesterol from lard were optimized by single factor experiment and response surface methodology as follows: dosage of β-cyclodextrin 2. 8%,ratio of water to lard 1. 2 ∶ 1,stirring time 41 min,stirring temperature 50 ℃ and stirring speed 1 000 r / min. Under the optimal conditions,the removal rate of cholesterol was 67. 54%. β-cyclodextrin still had high removal efficiency with removal rate of cholesterol 61. 9% when being reused for five times.
