荸荠皮果醋抗氧化效果的小鼠实验研究

摘　　要：荸荠皮果醋含有多种氨基酸、有机酸以及黄酮类物质。研究通过小鼠实验考察了荸荠皮果醋的体内抗氧化效果。实验结果表明:中剂量荸荠皮果醋(0.3mL/天)能对小鼠血清、肝脏和肾脏中SOD活性、GSH-Px活性产生明显影响,对MDA含量则明显降低。高剂量相对于中剂量差别不明显。低剂量(0.1mL/天)荸荠皮果醋能明显提高血清和肾脏中SOD活性,明显降低肝脏MDA含量。由于荸荠皮中含有丰富的黄酮类物质,加之酒精发酵和醋酸发酵过程中产生的各种有机酸,使荸荠皮果醋具有较好的抗氧化活性。In this study,the antioxidant activity of Eleocharis tuberose peel fruit vinegar is investigated through the experiment with mice.The results show that medium dosage（0.3mL/day）of TPFV has significant effects on the activity of SOD and GSH-Px in serum,liver and kidney of mice.Further more,malondialdehyde（MDA）also decreases notably.The high dosage has no apparently difference with medium dosage.Low dosage of TPFV is able to strengthen the SOD activity in serum and liver,and also decrease the MDA in liver markedly.The excellent antioxidant activity of TPFV should be attributed to the flavonoids contained in and the organic acids produced during the fermentation.
