摘 要:为了建立真空软包装甜玉米穗的货架期预测模型,研究不同真空软包装材料对甜玉米穗的重量损失,玉米粒的水分含量、硬度、还原糖含量的变化规律。通过重量法测定甜玉米穗的重量损失及玉米粒的水分含量,采用质构仪测定甜玉米粒的硬度,采用菲林试剂法测定还原糖含量,并用Origin 8软件来建立真空软包装甜玉米穗货架期预测模型。结果表明真空软包装的甜玉米穗随着储存时间的延长,重量损失呈线性;玉米粒的水分、硬度变化呈无规律,而还原糖则呈现指数递减,相关性良好。根据储存过程中真空软包装甜玉米穗上玉米粒中还原糖含量的变化,建立还原糖含量-贮藏时间的指数递减数学模型,可用来预测真空软包装甜玉米穗的货架期,为其贮藏保鲜提供理论参考。By studying the weight loss of the sweet corn ear, the water content, the hardness, the reducing sugar content of niblets with different vacuum-soft-packaging materials, the shelf-life prediction model of vacuum-soft-packaged sweet corn ear established. The weight loss of the sweet corn ear and the water content of niblet were determined by Weight Method. The hardness of niblet was determined by Texture Analyzer. The reducing sugar content of niblet was determined by Film Reagent Method. And the shelf-life prediction model of vacuum-soft-packaged sweet corn ear was established by Origin 8 software. The results reveal that the weight loss of vacuum-soft-packaged sweet corn ear demonstrates a linear pattern with the storage time being extended. While variation of water content and the hardness of niblet did not demonstrate a specific pattern. Meanwhile, the reducing sugar content of niblet exhibits exponential decline during storage. The mathematical model of exponential decline has been established according to the variation of reducing sugar content and is used to predict the shelf-life of sweet corn ear with vacuum-soft-packaging
