摘 要:以鲢鱼鱼皮为原料,在低于其变性温度下分别对鱼皮中杂蛋白和脂肪的脱除工艺进行了研究,并对鲢鱼鱼皮中酶溶性胶原蛋白的提取工艺参数进行了分析,测定了其热变性温度。结果表明,鲢鱼鱼皮原料中杂蛋白脱除的最佳工艺参数为以0.6 mol·L^(-1)的Na_2CO_3溶液为杂蛋白脱除试剂,在25℃下处理2次,每次6 h;鱼皮原料中脂肪脱除的最佳工艺参数为:采用无水乙醚作为脱脂试剂,在料液比1︰80(g/m L)下处理16 h;鲢鱼鱼皮中酶溶性胶原蛋白提取的最佳工艺条件为胃蛋白酶用量4 000 U·g^(-1),料液比1︰50(g/m L),浸提时间6 h;此胶原蛋白的热变性起始温度为31.80℃,峰值温度为34.54℃。The removing process of impurity proteins and fat from silver carp skin were studied below the denaturation temperatures, and the optimal extraction parameters of pepsin-soluble collagens were explored. The denaturation temperatures of pepsin-soluble collagens were analyzed. The results showed that the optimal parameters for removing impurity proteins from silver carp skin with 0.6 mol·L^(-1) Na_2CO_3 were mixing twice for 6 h each time at 25 ℃. The optimal parameters for removing fat from silver carp skin with anhydrous ether were material/liquid ratio of 1︰80(g/m L) of 16 h. The optimal parameters for the extraction of pepsin-soluble collagens from silver carp skin were pepsin's dosage 4 000 U·g^(-1) and material to liquid ratio of 1︰50(g/m L) for 6 h. The starting denaturation temperature of pepsin-soluble collagens from silver carp skin was 31.80 ℃, and the peak temperature was 34.54 ℃.
