摘 要:通过电子顺磁共振(EPR)法测定了6种茶饮料(样品1:康师傅绿茶,样品2:东方树叶绿茶,样品3:午后红茶,样品4:统一冰红茶,样品5:康师傅乌龙铭茶,样品6:东方树叶乌龙茶)对羟基自由基和超氧阴离子自由基的清除能力,采用分光光度法分别测定了茶饮料中茶多酚和总酚的含量。研究得到6种样品清除羟基自由基的能力为4>5>1>3>2>6,6种茶饮料清除超氧阴离子自由基的能力均很强。6种茶饮料的茶多酚含量的大小顺序为:5号样品>1号样品>2号样品>3号样品>6号样品>4号样品。6种茶饮料的总酚含量的大小顺序为:5号样品>1号样品>2号样品>6号样品>4号样品>3号样品。从实验中可以发现在茶饮料中茶多酚含量和总酚含量与抗氧化性之间没有明显的相关性。这是因为在茶饮料中除了茶多酚等酚类物质,还存在咖啡碱、维生素C和柠檬酸等具有抗氧化性的物质。In order to study the antioxidation activity of tea drinks,the scavenging activity to hydroxyl and superoxide anion radical of six tea drinks was determined by electron paramagnetic resonance in the experiment. Then the contents of tea polyphenol and total phenols in the tea drinks were determined by spectrometry. It was obtained in this study that the scavenging ability of six samples to hydroxyl radical is 4〉 5〉 1〉 3〉 2〉 6 and the scavenging ability of six tea drinks to superoxide anion radical are all strong,the order of tea polyphenolic content of six tea drinks is 5〉 1〉 2 〉3〉 6 〉4,and the order of total phenolic content of six tea drinks is 5〉 1 〉2 〉6〉 4〉 3. It was found that there is no obvious relativity between antioxidation activity and content of tea polyphenol and total phenols in tea drinks. It is because that there is some antioxidation substance( such as theine,Vitamine C and citric acid etc.) beside phenols( such as tea polyphenol) in the tea drinks. This method is simple,sensitive and quick to study antioxidation activity of tea drinks.
