摘 要:引进的菲律宾鳗鲡苗种中常有两种鳗鲡(太平洋双色鳗和花鳗鲡),对花鳗鲡的品质及养殖造成困扰。利用同一饲料饲养两种鳗鲡至成鳗后,分析二者肌肉脂肪酸及氨基酸组成,并应用统计学和FAO/WHO氨基酸评估模式进行全面营养比较。结果表明:两种鳗鲡肌肉脂肪酸组成特征相似,脂肪酸主要组成种类不少于11种,其中饱和脂肪酸3种、单不饱和脂肪酸4种、多不饱和脂肪酸4种;双色鳗和花鳗鲡不饱和脂肪相对含量均较高(63.2%,65.2%),富含多不饱和脂肪酸(二十碳四烯酸、EPA、DHA)。两种鳗鲡肌肉氨基酸组成平衡性较合理(SRC=81.30,79.66),均富含Glu,Arg,Asp等有助于术后病人康复的氨基酸,氨基酸组成特点与多种名优特水产品相类似,可用作部分疾病患者的食补。独立样本T检验表明:除双色鳗单不饱和脂肪酸相对含量极显著低于花鳗(P<0.01),其多不饱和脂肪酸含量显著高于花鳗鲡(P<0.05)。两种鳗鲡肌肉脂肪酸及氨基酸组成特征并无显著性差异(P>0.05)。可见,太平洋双色鳗和花鳗鲡虽为菲律宾鳗鲡的两个品种,但经同一饲料长期养殖后,成鳗肌肉脂肪酸及氨基酸整体营养价值较为类似。The species of eel elvers introduced from Philippine often conclude Anguilla bicolor pacifica and Anguilla marmorata, which is unfit for eel culture and sales. 2 eel species would cultured with the same feed till adult. The composition mode of fatty acid and amino acid of two eel species would be analysed with SPSS 17.0 and FAO/WHO amino acid evaluation mode. Results showed that the composition of fatty acid and amino acid are similar in two eel species. Both of them contained more than 11 kinds of fatty acid, including 3 kinds of saturated fatty acid, 4 kinds of monounsaturated fatty acid and 3 kinds of polyunsaturated fatty acid. Both are rich in unsaturated fatty acid(63.2%,65.2%). Results of statistics showed that unless MUFA and PUFA, the composition of fatty acid between them is not different(P〈0.05). The amino acid composition of eel muscle is similar as other famous aquatic products. The SRC of them are 81.30 and 79.66 while compare with FAO/WHO. 2 kinds of eel are rich in Glu, Arg, Asp, which are helpful for patient recovery. However, the statistics results showed that the composition mode of fatty acid and amino acid of 2kinds of eel are not different(P〈0.05). It indicated that with feeding the same feed, the nutrition of 2 kinds of eel,which introduced from Philippine, are similar.
