摘　　要：红曲色素是一种天然、安全、营养的食用色素,其具有良好的着色性和多重功能活性,因此在食品、医药等行业中具有良好的应用前景。该文介绍了红曲色素的组成、理化性质和生物活性,并对红曲色素研究及应用现状进行了综述,旨在为进一步研究红曲色素的功效提供理论基础和借鉴作用。Monascus pigments are a kind of natural, safe and nutritious food coloring and have a good colorability and multiple functional activities. Therefore, Monascus pigments have good application prospect in food, medicine and other industries. In this paper, the components, physico-chemi- cal properties and biological activity of Monascus pigments were introduced, research and application status were summarized, which aimed to pro- vide theoretical basis and reference for further research of the function of Monascus pigments
