摘　　要：从抗冻蛋白的来源、研究历程进行阐述,并对抗冻蛋白的作用机理、应用领域进行综述,以期为抗冻蛋白的工业化开发应用提供参考。From the source of the antifreeze proteins, elaborates the research process, and the mechanism of antifreeze proteins, the applications were reviewed, in order to provide references for the development of indus-trialization and application of antifreeze proteins.
