摘  要:为充分利用辣椒红素加工中废弃的副产物,采用微波辅助技术从中提取用途广泛、附加值高的果胶物质。在单因素实验基础上,通过正交实验优化提取工艺参数,确定了最佳提取条件为:所用酸为硫酸,微波功率为中低频,微波时间5min,料液比1∶20,p H为1,此时果胶提取率可达57.9%,并确定为高甲氧基果胶。Microware-associated extraction was used to extract pectin from capsanthin by-products. The optimal extraction technology was obtained by the single factor test and the orthogonal tests. The optimal extraction conditions were :extraction acid reagent was H2SO4,the microware power was lower to middle and extraction time was 5min,the ratio of solid to liquid was 1 :20 and p H was 1. The result showed the extraction rate reached 57.9%. And this pectin was confirmed as high-methyl pectin.
