摘 要:可食性抑菌膜是在可食性成膜基质中加入天然抑菌类物质,使其具有抑制一种或多种腐败菌生长繁殖的能力,进而达到延长食品货架期的目的。可食性涂膜具有安全无毒、操作简单、成本较低等优点。介绍了几种天然抑菌类物质及其抑菌机理;基于膜的抑菌能力、抑菌剂对膜阻隔性和机械性能的影响、膜的热力学转变特性(如玻璃化转变)等3个方面阐述了可食性抑菌膜的研究现状;总结了可食性抑菌膜在水产品保鲜中的应用现状,并对其发展前景进行了展望。Edible antimicrobial film is a kind of edible film with natural antibacterial material in the matrix, which can be used to prolong the shelf life of food owing to its ability to inhibit the growth and propagation of one or more kinds of spoilage bacteria. Edible coating film has the characteristics of safety, non-toxic, simple operation and low cost. Briefly summarize the several natural antibacterial substances and antibacterial mechanism. The research status of edible antimicrobial film is presented based on three aspects, namely the antibacterial ability of the film, the influence of the antibacterial agent to barrier and mechanical properties of the film and the thermal transition properties (such as glass transition) of the film. The research status of edible antimicrobial film and their future prospect on aquatic products preservation is also summarized.
