摘 要:通过田间试验研究摘叶、反光膜和摘叶+反光膜处理对赤霞珠葡萄可溶性固形物、可滴定酸、还原糖、总花色苷、总酚及单宁含量的影响,并使用模糊综合评价方法计算它们综合得分,旨在筛选出适合当地酿酒葡萄栽培的最佳模式。结果表明,与对照相比,摘叶处理葡萄中可溶性固形物、还原糖、总花色苷、总酚含量分别提高了4.6%、5.1%、43.2%、46.0%,可滴定酸含量显著降低(P<0.05)。而且,摘叶处理的最佳(40.99)和模糊综合评价得分最高(0.698 4)。由此认为,在赤霞珠果实转色中期摘叶处理适宜于陕西地区大量推广使用。The effects of leaf removal (LR), reflecting film (RF) and leaf removal+reflecting film (LR+RF) treatment on total soluble solids, titratable acid, reducing sugar, total anthocyanin, total phenols and tannin contents of the Cabernet Sauvignon grape were investigate by field experiments. In order to select the optimum pattern suitable for local wine grape cultivation, the synthesis score was calculated using fuzzy comprehensive evaluation method. The results showed that compared with the control, the contents of total soluble solids, reducing sugar, total anthocyanin, total phenols and tannin in grape with LR treatment were increased by 4.6%, 5.1%, 43.2% and 46.0%, respectively, but titratable acid content was decreased significantly (P〈0.05). What's more, the sugar acid ratioin the grape with LR treatment was the optimum (40.99) and the fuzzy comprehensive evaluation score was the highest (0.698 4). So LR treatment was suitable for extensive using in Shaanxi area at the middle veraison of Cabernet Sanvignon fruit.
