摘 要:从江苏南京农家自制的酸豆角中分离到1株具有强降解亚硝酸盐能力的乳酸菌,命名为SD-7,经形态观察、生理生化和16 S r DNA遗传学分析,把该菌株鉴定为植物乳杆菌。对该菌株的生长和降解亚硝酸盐的特性的研究表明,该菌株在30℃条件下18 h即可达到稳定期,产酸能力较强,稳定期的p H值为3.58。在30℃条件下培养24 h和48 h,亚硝酸盐的降解率分别为85.96%和91.64%。SD-7具有较好的耐盐能力,当氯化钠含量低于6%时对该菌的生长和降解亚硝酸盐能力影响不大。SD-7的耐酸能力较强,在p H 4,30℃条件下培养24 h和48 h,菌株的OD600仍达到1.58和1.88,此时亚硝酸盐降解率为58.56%和64.56%。A strain of lactic acid bacteria with strong ability to degrade nitrite was isolated from pickled carob made in Nanjing city, Jiangsu province and named SD-7. It was identified as Lactobacillus plantarum by morphology, physiological and biochemical characteristic and 16 S r RNA sequencing analysis. The results of growth and nitrite degradation characteristics of the strain showed that, the strain can achieve the stable period after 18 hat 30 ℃, it has strong acid production capacity, the p H value was 3.58 atstable period. Nitrite degradation rate were 85.96% and 91.64% after culturing for 24 h and 48 h under the condition of 30 ℃. SD-7 has better resistance to salt, the growth of bacteria and nitrite degradation ability of SD-7were not affectedwhen sodium chloride content were lower than 6%. SD-7 has good acid resistance, when the p H was 4, after culturing for 24 h and 48 h at 30 ℃, the value of OD600 were 1.58 and 1.88, nitrite degradation rate were 58.56% and 64.56% respectively.
