摘 要:通过体外发酵培养的方法,比较了碱提阿拉伯木聚糖(AX)及其酶法(AXEM1、AXEM2)和酸法(AXC1、AXC2)降解产物的体外益生活性。结果表明,碱提AX及其酶法和酸法降解产物均能促进双歧杆菌增殖,与葡萄糖相比,log值增加0.98~1.27个数量级;酶解样品AXEM1对乳酸杆菌的增殖效果最好,阳性对照菊粉及其他AX样品及均不能促进乳酸菌生长。AX及其降解产物益生活性分数均大于0,表明AX及其降解产物均具有一定的益生活性;其中益生活性值最高的为AXEM2,益生活性分数达到0.35,高于阳性对照菊粉。采用离子色谱测定发酵液短链脂肪酸组成及含量发现,AX训组发酵液中总短链脂肪酸含量最高,约41.02.μmol/mL。丁酸作为益生元活性的重要指示性指标,仅在酶解样品AXEM2中检出,含量为0.05μmol/mL,与AXEM2样品益生活性分数最高的结果一致。In vitro fermentation method was used to evaluate the prebiotic activity of arabinoxylan with alkali extraction (AX) and its degradation products with enzyme (AXEMI , AXEM2 ) and acid (AXc1, AXc2 ). The results showed that all arabinoxylan samples could promote the proliferation of bifidobacteria and the log value of bifidobacteria increased from 0.98 to 1.27 magnitude compared with glucose. AXEM! had a better effect on the proliferation of lactobacilli. Inulin, the positive control and other AX samples could not promote the growth of lactobacillus. The prebiotic activity scores of arabinoxylan samples were higher than 0, which indicated that they all had prebiotic activity. And AXEM2 sample showed the highest score 0. 35, which was higher than the score of inulin. Short - chain fatty acids (SCFA) detected by ion Chromatography showed that the total SCFA contents of AXEM1 was the highest, which was about 41.02 μmol/mL. Butyrate, as an important indicative target of prebiotic activity was only detected in AXEM2 group with the content of 0. 05 μmol/mL, which was consistent with the result that the highest prebiotic activity score was obtained in AXEM2 group.
