摘  要:麦芽寡糖醇是近年来发现的现代食品工业中重要的糖醇,其中由麦芽三糖衍生而得的麦芽三糖醇的含量决定了其质量与用途。以玉米淀粉为原料,首先研究耐高温α-淀粉酶对淀粉的液化作用,制得特定液化度的淀粉液化液;然后探究普鲁兰酶、β-淀粉酶和中温α-淀粉酶在淀粉糖化阶段的作用,获得高麦芽三糖含量的低聚麦芽寡糖。由此通过加氢反应制得高麦芽三糖醇含量的低聚麦芽寡糖醇。淀粉液化与糖化的最佳条件是:以25%(w/v)淀粉乳开始,控制淀粉液化后的DE值为20,分别按8、100、16 U/g的添加量同步加入普鲁兰酶、β-淀粉酶和中温α-淀粉酶,在pH5.5、55℃下糖化10 h。所得糖液经加氢制得的糖醇中麦芽三糖醇占42.18%、麦芽糖醇占48.51%,总低聚糖醇转化率达到98.76%。研究结果可指导高品质麦芽寡糖醇及其相关产品的高效制造。Maltooligosaccharide alcohol is one of recently developed and the most important sugar alcohols with a wide usage in food industry, in which maltotriitol, derived from maltotriose, is a crucial component that determines its quality and application formula. Using corn starch as raw material, in present study, thermostable α-amylase was first investigated for liquefying the starch to get the liquefied starch with specific liquefaction degree. Then, pullulanase, β-amylase and bacterial α-amylase were examined for saccharification to obtain the malto-oligosaccharides containing high-content of maltotriose.The maltooligosaccharide alcohol syrup with high percentage of maltotriitol was prepared af ter hydrogenation. The optimized condition for liquefaction and saccharification was: starch slurry of 25%(w/v), liquefaction degree been controlled to DE value of 20, saccharification at 55 ℃ and p H 5.5 for 10 h with 8 U/g pullulanase, 100 U/g β-amylase and 16 U/g bacterial α-amylase. With the optimized condition the prepared sugar alcohol contained 42.18% maltotriitol and 48.51% maltitol with total conversion rate up to 98.76%. The results would promote the potential applications for industrial manufacturing the high-grade maltooligosaccharide alcohol and relatives.
