摘  要:目的分析上海市宝山区市售水产品副溶血性弧菌污染状况,为食源性疾病防制提供科学依据,为开展食品安全风险评估提供基础资料。方法随机抽取2011—2013年辖区内大型超市、农贸市场和餐饮店作为采样点,采集水产品样品540份,依据GB/T4789.7-2008进行副溶血性弧菌定量检测。结果 540份水产品监测结果显示,副溶血性弧菌的总体检出率为20.93%,定量检测均值为2.10 MPN/g,最大值为43 MPN/g,其中虾蟹类检出率(37.30%)和定量均值(2.76 MPN/g)均最高,其次为贝类;不同种类(P<0.05)、不同年份(P<0.05)、不同季度(P<0.05)和不同采样地点(P<0.05)水产品的副溶血型弧菌检出率差异均有统计学意义。结论宝山区副溶血性弧菌污染状况不容乐观,有必要深入开展副溶血性弧菌分子流行病学研究,适时开展高危食品的风险评估,提出风险管理建议,同时应加强监督管理,积极开展健康宣教。OBJECTIVE To master the contamination status of vihrio parahaemolyticus of aquatic products in Baoshan District, so as to provide scientific basis for foodborne disease prevention and basic data for the food safety risk assessment. METHODS The large su- permarkets, farmers markets and restaurants were selected randomly as the sampling points. 540 pieces of aquatic products were col- lected for quantitative detection of vibrio parahaemolyticus according to GB/T4789.7-2008. RESULTS According to the results of monitoring, the total detection rate of vibrio parahaemolyticus was 20.93% , the quantitative mean was 2.10 MPN/g and the maximum was 43 MPN/g. Shrimps and crabs were the highest, followed by shellfish. The detection rate was significantly different in different species(P〈0.05), in different years(P〈0.05), in different quarters(P〈0.05) and from different sampling points(P〈0.05). CONCLU- SION The contamination status of vibrio parahaemolyticus was not optimistic in Baoshan District. It aws necessary to carry out molecu- lar epidemiological studies on vibrio parahaemolyticus and risk assessment of high risk food to provide risk management recommenda- tions. At the same time, it should strengthen the supervision and management and carry out health education actively.
