摘  要:对不同储藏温度下高水分玉米微生物活性值与玉米主要品质指标脂肪酸值的变化及其相关性进行了分析。试验表明:随储藏温度及玉米水分含量的增加玉米微生物活性值与脂肪酸值呈上升趋势;当外界环境适合微生物生长繁殖时,相应的微生物活性值增加显著,由平均初始62u增加了12.15~25.28倍。分析显示,微生物活性值与玉米脂肪酸值的相关系数为0.7867~0.9923,两者相关性很好;微生物活性值与玉米脂肪酸值的相关性受储藏温度、玉米水分的共同影响,为此所建立的统计学模型为一个二元二次方程,其模型判定系数为0.9706,调整后判定系数为0.9608,说明模型拟合度很高。This paper studied the correlation between the microbial activity and the fatty acid level of corns under different storage conditions. The result shows: both the microbial activity level and the fatty acid level in-creased as the storage temperature / moisture content of corn increased; when the storage conditions was in favor of the growth of microbe, the microbial activity level grew rapidly starting from 62 u to 12.15 ~ 25.28 times of its starting level. Analysis on the correlation coefficient between the microbial activity level and the fatty acid level shows that: the correlation coefficients were between 0.7867 ~0.9923, suggesting a very strong relationship between the two variables generally. The level of correlation(correlation coefficient) was affected by both the storage temperature and the moisture content of corn. A two-variable(temperature and moisture content of corn) quadrat-ic model was fitted to regress the experiment outcomes. The R-squared(coefficient of determination) was 0.9706,and the Adjusted R-squared was 0.9608, both indicated that the observed experiment outcomes were very accu-rately replicated by the model.
