摘 要:以马铃薯B型微晶直链淀粉和正葵醇为原料,采用溶剂法合成直链淀粉-正葵醇复合物,研究了乙醇浓度、直链淀粉与正葵醇的质量体积比、结晶温度等因素对该复合物结晶度的影响,建立了二次多项式回归模型.在单因素试验基础上,采用Box-Behnken响应面法试验优化了复合物的制备工艺条件.结果表明,直链淀粉-正葵醇复合物的最佳复合工艺条件为乙醇浓度7.80%,直链淀粉与正葵醇质量体积比(g∶L)10∶2.6,结晶温度55℃.在此条件下,预测产品结晶度将达到63.25%,验证试验所得产品平均结晶度为62.97%,说明该模型可靠性良好.Amylose-n-decanol complex was prepared by solvent method with B-type crystallite potato to amylose and n-decanol as raw material. The effects on complex synthesis process by the three factors of ethanol concentration,the ratio of quality and volume of amylose to n-decanol,crystallization temperature were discussed.The quadratic polynominal model was established. On the basis of single factor test,the optimum complex synthesis process was obtained through Box-Behnken experimental design. The results showed that the optimum complex synthesis process of amylose and n-decanol was additive amount of ethanol concentration 7. 80%,the ratio of quality and volume of amylose to n-decanol(g∶L) 10∶2. 6,crystallization temperature 55 ℃. The degree of crystallization of amylose-n-decanol complex forecasted will be to 63. 25%. Under this condition,the products crystallinity on average achieved from verification test is 62. 97%,and the model reliabitily is good.
