摘  要:目的:建立食品中有机硒含量和无机硒含量的测定方法。方法:50%盐酸提取食品中无机硒成分,通过硝酸-高氯酸混合酸体系进行消解,测定无机硒含量。有机硒含量通过总硒与无机硒含量差减法获得。结果:硒的检出限是0.0028 mg/kg,线性范围是(0~10)ng/mL。经回收实验与实际样品检测,总硒加标回收率为83.82%~101.46%,相对标准偏差(RSD)为0.75%~3.79%;无机硒加标回收率为97.95%~102.47%,相对标准偏差(RSD)为0.64%~4.10%。结论:该测定方法线性范围广、重复性好、检出限低,适合用于测定食品中有机硒及无机硒含量。Objective: To establish a method for the determination of organic selenium and inorganic selenium in food by hydride generation-atomic fluorescence spectrometry. Methods: Inorganic selenium was extracted with the concentration of 50% hydrochloric acid and digested by nitric acid-perchloric acid system. Determination of organic selenium was the difference between total selenium and inorganic selenium content. Results: Detection limit of Se was 0.0028 mg/kg. Linear range of this determination method was(0~10)ng/mL. Recovery rates of determination in total selenium and inorganic selenium were 83.82%~101.46% and 97.95%~102.47%. The relative standard deviations of determination in total selenium and inorganic selenium were 0.75%~3.79% and 0.64%~4.10%. Conclusion: The methods for the determination of organic selenium and inorganic selenium in food were appropriate because of the wide linear range, good reproducibility, and low detection limit.
