摘　　要：水溶性维生素是人体必需营养元素,摄入过量或缺乏都将导致各种疾病。介绍几种常用的水溶性维生素分析方法,并对目前应用较多的先进技术方法的研究成果进行归纳总结,以期为维生素强化食品的监测提供理论与技术支持。Water-soluble vitamin is the nutrient element which is essential for human body, either excessive absorption or lack will lead to various diseases. This paper introduced several common used analytical method of water-soluble vitamin, and summarized the re- search result of advanced techniques method which used more at present, so as to provide theoretical and technical support for the mon- itoring of vitamin fortified foods.
