摘  要:本文研究了油茶籽油、核桃油、橄榄油、杏仁油、文冠果油、长柄扁桃油6种木本油料种仁油脂的脂肪酸组成、微量营养成分含量以及荧光特性。研究表明,油茶籽油、橄榄油、杏仁油、长柄扁桃油的脂肪酸以油酸为主(杏仁油65.61%~油茶籽油80.58%),核桃油的脂肪酸以亚油酸(64.19%)为主,文冠果油的脂肪酸以油酸和亚油酸为主;6种油脂中,橄榄油微量营养组分中总酚含量最高,为725.64 mg没食子酸/kg,长柄扁桃油中生育酚和植物甾醇含量均最高,分别为61.06 mg/100 g和314.53 mg/100 g;6种毛油中,长柄扁桃油的氧化稳定性最佳(OSI值13.87 h);荧光扫描显示6种木本油料油脂具有不同的荧光光谱特性,一定程度上可以作为木本油料鉴伪的手段。The fatty acid composition, micronutrient and fluorescence characteristic of oils from 0 different woody oils ( Camellia oleosa seed oil, Walnut oil, Olive oil, Almond oil, Xanthoceras sorbifolia oil, Amygdalus pedunculata pall oil) were studied. The results indicated that the oleic acid was the main fatty acid in Camellia oleosa seed oil, Olive oil, Almond oil, Amygdalus pedunculata pall oil (Almond oil was the lowest of 65.61% , Camellia oleosa seed oil was the highest of 80.58% ), the linoleic acid (64.19%) was the main fatty acid in Walnut oil, while in the Xanthoceras sorbifolia oil were the oihhe oleic acid and the linoleie acid. In the 6 different woody oils, the total phenols content was the highest (725.64 mg gallic acid/kg) in Olive oil from the results of micronutrient ingredient, while the highest contents of tocopherol and phytosterol were both occured in Amygdalus pedunculata pall oil, 61.06 mg/100 g and 314.53 mg/100 g respectively; the oxidative stability of the Amygdalus pedunculata pall oil ( 13.87 h) was the best among 6 crude oils; The fluorescence scanning showd that the fluorescence spectrum characteristics were different among the 6 woody oils, and could identify authenticity as a method to a certain degree.
