摘　　要：利用HACCP管理方法,针对赛事食品中的安全危害监控预防,从制定食品加工流程、计划HACCP实施表、严格要求SSOP这三方面构建食品安全体系。对HACCP体系具体运用,讨论国内的HACCP实践环境和发展前景。将此体系高效科学地应用到食品安全管理中,为赛事食品安全管理提供参考。Through the use of HACCP management method,Hazard and monitoring the food safety in athletic contest.From making food processing process,and the implementation of the plan HACCP table,the strict requirements of the three aspects of the construction of SSOP food safety system. The specific application of HACCP system was discussed,and the practice environment and development prospect of HACCP in China were discussed. The application of this method to the management of food safety,to provide reference for food safety.
