摘  要:探索纤维素酶法提取葡萄皮中花色苷的提取工艺。采用单因素试验和正交试验相结合的方法研究不同因素对葡萄皮花色苷提取的影响。最佳提取条件为pH 3、酶解温度45℃、酶添加量1.2%、料液比1∶15(g/mL)、酶解时间30 min。以期为葡萄皮花色苷的提取技术提供参考依据。Extraction technology of anthocyanins from grape skins with cellulase was studied. Combined single factor and orthogonal experiment,the effects of different factors on extraction of anthocyanins were studied. The optimal extraction conditions were as follows:pH 3,enzymatic hydrolysis temperature 45 ℃,enzyme addition 1.2%,ratio of material to liquid 1∶15(g/mL),enzymatic hydrolysis time 30 min. The research could provide reference for the extraction of anthocyanins from grape skins.
