摘  要:采用液体发酵研究了三种金属离子Cu^(2+)、Fe^(2+)和Fe^(3+)对红曲霉发酵代谢产色素的影响。添加不同浓度的CuSO_4溶液、FeSO_4·7H_2O溶液和FeCl_3溶液到培养基中发酵培养,测量发酵液中的红曲色素色价,进行对比分析,发现当CuSO_4溶液浓度逐渐增大时,红曲色素的色价逐渐降低;当Fe^(2+)逐渐增加时,色素含量上升;当添加Fe^(3+)后,色素含量不稳定。因此,Cu^(2+)和Fe^(3+)不适合作为优化培养基的金属离子,Fe^(2+)利于色素生成,合适的FeSO_4添加浓度为0.05 mmol/L。The effects of different metal irons including Cu^2+,Fe^2+ and Fe^3+ on the yield of Monascus pigments were detected in liquid fermentation.Compared to the control,different concentration of CuSO4,FeSO4· 7H2O and FeCl3 solution were added to the fermentation medium to invest the effect of metal saltson Monascus pigments.It was found that the color value of the Monascus pigment was decreased with the increased concentration of CuSO4 solution.When the concentration of Fe^2+ was increased,the pigment value was increased too.Adding Fe^3+ solution,the pigment content was unstable.Therefore,Cu^2+ or Fe^3+ is not suitable for the yield of pigment;while Fe^2+ can promote the increasing of Monascus pigment,and the best concentration for FeSO4 solution was 0.05mmol/L.
