摘　　要：从物理保鲜、生物保鲜和复合保鲜技术三个方面综述了近十五年我国带鱼保鲜技术的研究进展,介绍了带鱼品质鉴定的方法,展望了带鱼保鲜产业未来的研究方向和研究热点,以期为更好地保持带鱼的贮藏品质,延长货架期提供参考借鉴。This paper summarizes the research progress of the preservation technology of hairtail in China in recent fifteen years from three aspects：physical preservation, biological preservation and compound preservation. This paper introduces the methods of quality evaluation of hairtail, and prospects the future research direction and research hotspot of hairtail preservation industry. The objective is to provide reference for effectively maintaining the storage quality and extending the shelf life of hairtail.
