摘  要:目的了解广东省市售婴幼儿配方食品中蜡样芽胞杆菌的污染状况。方法于2012年-2016年根据广东省人口分布情况、地域分布特点、经济发展水平等因素,选择17个地市的超市、百货商场、母婴专卖店、农贸市场以及网店,按照随机抽样的方法采集婴幼儿配方食品样品抽查(包括婴幼配方食品、较大婴儿和幼儿配方食品),并对其中的蜡样芽胞杆菌进行5年连续监测。结果 2012年-2016年共采集到婴幼儿配方食品774份,蜡样芽胞杆菌的总检出率为13.44%,定量结果在10 cfu/g^870 cfu/g。其中,婴儿配方食品的蜡样芽胞杆菌检出率为11.94%,较大婴儿和幼儿配方食品的检出率为16.07%。产地外国的婴幼儿配方食品检出率明显比产地本省和外省低。蜡样芽胞杆菌在2012年-2016年每年均有检出,2012年检出率最高,2016年检出率最低。采样场所中母婴专卖店的检出率和样品>100 cfu/g的百分比最高。结论广东省市售婴幼儿食品的蜡样芽胞杆菌总体污染处于中等水平,少数样品的定量结果>100 cfu/g,应引起关注。Objective To investigate the contamination levels of Bacillus cereus in infant and young children formula food in Guangdong province. Methods From 2012 to 2016,according to population distribution,characteristics of food production,economic development and regional distribution features of Guangdong province,infant and young children formula food samples were randomly collected from supermarkets,department stores,maternal supply stores,farmer markets and online shops in 17 cities of Guangdong province,and Bacillus cereus testing was carried out. Results A total of 774 infant and young children formula food samples were collected from 2012 to 2016. The detection rate of Bacillus cereus was 13. 44%,while Bacillus cereus counts were within 10 cfu/g-870 cfu/g. The detection rate of Bacillus cereus in infant formula food and older infants and young children formula food were 11. 94% and 16. 07%,respectively. The detection rate of overseas infant and yang children formula food was less than that in Guangdong and other provinces. Bacillus cereus was detected during 2012-2016,with the highest in2012 and lowest in 2016. The detection rate of Bacillus cereus in mother and infant franchised stores and the percentage of samples 100 cfu/g were the highest. Conclusion The contamination level of Bacillus cereus in Guangdong province was medium. Bacillus cereus counts of some samples were higher than 100 cfu/g,so more attention should be paid.
