摘  要:以安康富硒猴头菇为原料,运用单因素和正交试验设计,对酶法辅助提取猴头菇硒多糖工艺中复合酶(纤维素酶、果胶酶和木瓜蛋白酶)的添加量进行优化。结果表明:各酶的最优添加量为纤维素酶0.5%,果胶酶0.6%,木瓜蛋白酶0.4%。在酶的最优添加量下,硒多糖的提取率可达17.52%,硒多糖中硒含量为0.282mg/kg。Se-enriched Hericium grown in Ankang was used as the raw material, andadditive amount of complex enzymes (cellulase, pectinase and papain) in enzymes-assisted se-polysaceharides extracting process was optimized by single factor test and orthogonal test, with the extraction rate of se-polysaccharides as indicator. The results in- dicated that the optimal dosage of each enzyme in se-polysaccharides extracting process was as follows, cellulase 0.5%, pectinase 0.6%, papain 0.4%. Based on the optimal condition, the extraction rate of se-polysaccharides was reach 17.52%,and the content of selenium was 0.282mg/kg.
