摘  要:研究对宜宾、资中、南充、泸州、乐山等地所产腌菜中Mg,Al,44Ca,Ti,V,Mn,Fe,Co,60 Ni,Cu,Zn,As,82Se,96 Mo,109 Ag,114Cd,120Sn,123Sb,202 Hg,208Pb等元素进行分析后发现:第一,除泸州地区所产芽菜的Mg,44Ca等几种金属元素外,其他产地的腌菜所含有的金属元素之间无明显差异,泸州地区所产的芽菜含量过高应是由辅料添加造成的。第二,对比9种样品20种元素的检测结果,相较于另外18种元素,Mg,44Ca含量较高,应该是由辅料添加引入的。因为在酱腌菜制作工艺中,需要加入钙盐等物质增强其产品脆性。第三,从产地聚类分析结果来看,乐山、资中的产品之间联系更加紧密;宜宾4种芽菜与南充冬菜之间的联系更加紧密。分析结果并没有呈现出与产地距离上的一种相关性。In this study, the content of Mg, Al, ^44Ca, Ti, V, Mn, Fe, Co, ^60Ni, Cu, Zn, As, ^8ZSe, ^96Mo,^105gAg,^114 Cd,^120 Sn,^123 Sb,^2022 Hg,^208 Pb is analyzed in pickles from Yibin, Zizhong, Nanchong, Luzhou and Leshan. It's found that. firstly, except that the pickles produced in Luzhou region have Mg, 44Ca and other metal elements, the other regions" pickles have no significant difference in metal elements containing, Luzhou sprout's high content should be caused by the addition of ingredients. Secondly, compared with the testing results of 20 kinds of elements in 9 samples, Mg and ^44Ca content is higher compared with the other 18 kinds of elements and it should he caused by the addition of ingredients. Because in the production process of pickles, it is necessary to add calcium salt and other substances to enhance the fragility. Thirdly, the origin cluster analysis shows that the products in Leshan and Zizhong are more closely related to each other, and the four sprouts of Yibin and Nanehong winter vegetables are more closely connected. The analysis results do not show a correlation with the origin distance.
