摘 要:目的了解小麦及面粉中铝本底含量,为食品安全监管部门面制品质量监管提供依据,为小麦及其制品中含铝食品添加剂标准修订提供基础数据。方法在泰州三县三区各乡镇随机抽取本地产小麦56份、面粉65份,采用电感耦合等离子体发射光谱仪(ICP-OES)法检测样品中铝含量。结果小麦中铝含量为2.80 mg/kg^53.0 mg/kg,中位数为16.5 mg/kg,平均含量达18.6 mg/kg,33.9%的小麦样品中铝含量低于10 mg/kg,处于较低水平;面粉中铝含量为0.39 mg/kg^53.0 mg/kg,中位数为6.0 mg/kg,平均含量达10.4 mg/kg,70.8%的面粉样品中铝含量低于10 mg/kg。小麦与面粉中铝含量差异有统计学意义(P<0.05)。就本地而言,可以45 mg/kg作为面制品中铝限量值的参考,判定是否添加硫酸铝钾、硫酸铝铵等含铝食品添加剂。结论本地小麦及面粉中铝含量较低。小麦及面粉中铝含量地区差异较大,建议各地根据当地实际情况,制订适合本地的面制品铝含量标准。Objective To investigate the aluminum contents in wheat and wheat flour,so as to provide basis for the safety monitoring divisions to monitor the quality of wheat flour products,and to provide basic data for revising the standards of aluminum additives in wheat and wheat flour products. Methods 56 wheat samples and 65 wheat flour samples were collected from 3counties and 3 districts in Taizhou and the contents of aluminum were detected with inductively coupled plasma-atomic emission spectroscopy( ICP-OES). Results The contents of aluminum in wheat ranged from 2. 80 mg/kg to 53. 0 mg/kg,with the median of 16. 5 mg/kg and the average content of 18. 6 mg/kg. The contents in 33. 9% samples were under 10 mg/kg,staying in a lower level. The aluminum contents in wheat flour were within 0. 39 mg/kg-53. 0 mg/kg,with the median of 10. 4 mg/kg and the average content of 6. 0 mg/kg. The contents of aluminum in 70. 8% wheat flour samples were less than 10 mg/kg. The difference of aluminum content between in wheat and in wheat flour was statistically significant( P〈0. 05). We suggest45 mg/kg as the reference criteria of aluminum additives for wheat products,such as aluminium potassium sulfate and ammonium sulfate. Conclusion The contents of aluminum in wheat and wheat flour from Taizhou city are low. There is a great difference among the samples from different areas. It is better to formulate local standard for aluminum content in wheat flour products according to their own situation.
