摘  要:目的掌握遂宁市市售食品中食源性致病菌污染状况和水平,判定高危食品种类,为食源性疾病的预防和控制提供科学依据。方法依据2012-2015年《全国食源性致病菌监测工作手册》,在遂宁市范围内随机抽取11大类1088份食品样品后进行沙门菌等8种食源性致病菌的检测。结果 5年共检测食品样品1 088份,在172份样品中共检出致病菌200株,食源性致病菌检出率为15.81%,以铜绿假单胞菌的检出率最高43.75%,其次为大肠埃希氏菌12.11%,沙门菌的检出率最低0.96%;检出致病菌居前3位的的食品包括桶装饮用水(43.75%)、水产品(30.59%)、肉及肉制品(24.87%)。结论桶装饮用水和水产品为主要的污染食品,应加强监管;同时作为直接入口的熟肉制品和乳制品的污染不可忽视。Objective To understand the contamination status and levels of food-borne pathogens in various commercially available food in Suining,and to determine the categories of high-risk food,so as to provide some scientific basis for preventing and controlling food-borne diseases. Methods A total of 1088 food samples of 11 categories in the city were randomly selected according to the national food-borne pathogens monitoring workbook to monitor eight categories of food-borne pathogens such as Salmonella. Results A total of 200 strains of pathogens had found in 172 food samples over the past 5 years. The positive rate was 15. 81% totally. The detection rate of Pseudomonas aeruginosa,43. 75%,was the highest. The next was Escherichia coli,which detection rate was 12. 11%. The detected rate of Salmonella,0. 85%,is the lowest. The top three samples with detectable rates of food-borne pathogens were barreled drinking water( 43. 75%),aquatic products( 30.59%),and meat and meat products( 24. 87%). Conclusions Barreled drinking water and aquatic products as the main tainted food should be supervised strongly,and an emphasis should be also put on pollution of ready-to-eat food,such as cooked meat products and dairy products.
