摘　　要：红松种子仁是优质的植物资源,其所含的蛋白质更是非常优质的蛋白质来源,近年来得到国内外学者的广泛关注和研究。综述了松仁蛋白的提取方法、理化性质和生理活性以及主要成分的生理功能,以期为松仁蛋白进一步的开发利用提供参考。Pinus Koraiensis seed （PKS） is a kind of high-quality plant resources, and its protein is a very good source of protein.In recent years, it has been widely concerned and studied by scholars at home and abroad.Review the physiological function of pine nut protein extraction method, physicochemical properties and biological activity as well as the main component, in order to provide reference for the development and utilization of pine nut protein deep.
