摘  要:对野生和人工栽培羊肚菌的营养素和食用安全性进行评估,研究分析两种羊肚菌的无机元素、氨基酸、多糖、蛋白质、脂质等成分的含量,对比两者的食用及经济价值。通过电感耦合等离子质谱法(ICP-MS)微波消解检测两种羊肚菌中的无机元素以及重金属元素含量,采用相应国家标准或行业标准检测其营养素含量。结果显示,两种羊肚菌样品中铅、汞、铬、镉等几种有害金属元素的含量均在安全限量值以内,具有较高的食用安全性;野生羊肚菌中蛋白质和无机元素总量比人工栽培羊肚菌中的高出40%左右;人工栽培羊肚菌中的脂质、多糖以及必需氨基酸的含量稍高,但两者相差不多。研究表明,野生羊肚菌的营养素和食用安全性都比人工栽培羊肚菌的更高,因此,野生羊肚菌的食用价值更高。To evaluate the nutrient and food safety of the wild and cultivated Morchella, the contents that two kinds of Morchella includes inorganic elements, amino acid, polysaccharide, protein and lipid and so on were analyzed. Compare the food and economic value of the two. The contents of inorganic elements and heavy metal elements in two kinds of Morchella were detected by inductively coupled plasma-mass spectrometry microwave digestion, and the nutrient content was tested by national standard or industry standard. The results showed that the contents of several harmful metal elements like plumbum, mercury, chromium and cadmiun in the samples of two kinds of amniotic strains were within the safe limit value. It had high food safety; The contents of a few inorganic elements in wild amniotic bacteria were about 40%, higher than that in cultivated Morchella; The lipid polysaccharides and essential amino acids were slightly higher in the cultivated Morchella, but there was little difference between them. The researches showed that the nutrients and food safety of wild Morchella were higher than those of cultivated Morchella. Therefore, the edible value of wild Morchella was higher than cultivated morchella.
