摘  要:以羟甲基淀粉、羟丙基淀粉、醋酸酯淀粉、磷酸酯淀粉作为成膜基质,以玉米原淀粉为参比,糊化后分别制作成5种淀粉膜,检测淀粉膜力学性能、耐折性、透明度、水溶性和透油系数。同时,对膜进行扫描电镜、红外光谱和X-射线衍射分析,探讨膜的微观形貌结构与内部分子作用机制。结果表明:羟丙基淀粉膜的拉伸强度最高(33.99 MPa)、醋酸酯淀粉膜的透明度最高(63.33%)、透油系数最低(0.32 g·mm·m^(-2)·d^(-1))、磷酸酯淀粉膜耐折性最大(59次)、水溶性最小(23.2%)。醋酸酯淀粉膜的分子间融合性最好,结晶性能强,结晶颗粒小;羟丙基淀粉膜羟基(-OH)特征峰右移,使氢键作用增强,拉伸强度变大;磷酸酯淀粉膜结晶能力弱,使其疏水作用增强。Hydroxymethyl starch, hydroxypropyl starch, acetate starch and phosphate starch were used as film matrix, and corn starch was used as reference. After gelatinization, 5 kinds of starch films were made respectively. The mechanical properties, folding resistance, transparency, water solubility and oil permeability coefficient of the starch film were detected. Meanwhile, SEM, IR and X-ray diffraction were used to analyze the microstructure and internal molecular mechanism of the membrane. The results showed that the tensile strength of the hydroxypropyl starch film was the highest(33.99 MPa), the transparency of the acetate starch film was the highest(63.33%), the oil permeability coefficient was the lowest(0.32 g·mm·m(-2)·d(-1)), the phosphate starch film had the maximum folding resistance(59 times) and the minimum water solubility(23.2%). The intermolecular fusion of the acetate starch film was the best, the crystallization property was strong, the crystalline particle was small, the hydroxypropyl starch film hydroxyl(-OH) characteristic peak was shifted right, the hydrogen bond action was enhanced, the tensile strength became larger, the phosphate starch film had weak crystallization ability and the hydrophobic effect was enhanced.
