摘  要:目的全面了解广东省超市冷冻食品贮存现状,并提出有效的HACCP对策。方法以问卷调查、冷冻设备调查表和食品温度贮存记录表方式,调查了广东省各地级市大中小超市冷冻食品贮存现状,提出相应HACCP对策。结果超市人员对冷冻食品贮藏知识学习不到位,在日常冷冻食品贮藏销售过程中关键点控制力度不足,缺失相对应的冷冻设备管理与记录为最主要食品风险隐患。大中小超市都存在冷冻设备没有标示温度、测量温度不符合冷冻食品贮存温度的情况,尤其在小型超市情况更为严重。结论针对于广东省冷冻食品超市贮存现状,超市应做好人员管理培训和日常冷冻食品贮存登记存档,有关部门增强抽检监测和对不合格商品的处罚力度,有效解决冷冻食品安全问题。Objective To understand the status of frozen food storage in supermarkets in Guangdong province, and put forward effective HACCP countermeasures. Methods Based on the questionnaire survey of refrigerating equipment and food temperature storage record, the status of frozen food storage in large and medium supermarkets in prefecture-level cities of Guangdong province was investigated, and corresponding HACCP countermeasures were proposed. Results Supermarket personnel did not have adequate knowledge of frozen food storage, failed to control key points in the process of daily frozen food storage and sales, and lacked corresponding management and records of frozen equipment, which were the most important risks of food. All supermarkets had the situations, where refrigerating facilities were not showing temperature and the measured temperature did not meet the storage temperature of frozen food, especially in small supermarket. Conclusion In view of the storage status of frozen food supermarkets in Guangdong, the supermarket should do a good job of personnel management training and the daily storage of frozen food storage. The relevant departments should strengthen the monitoring and punishment of unqualified goods and effectively solve the safety problems of frozen food.
