摘 要:以婺源地区2个本地茶树品种(本地群体种和上梅洲)及3个引进品种(翠峰、迎霜、赣茶2号)为材料,制成婺源茗眉绿茶成品,通过对这5份成品绿茶进行品质感官审评和生化成分分析,来探讨不同茶树品种对婺源茗眉的适制性和制茶品质,为选择合适茶树品种并推广婺源茗眉提供理论依据。感官审评结果表明,翠峰总分最高,品质最好,其他依次是上梅洲、赣茶2号、本地群体种和迎霜。生化成分检测结果表明,5份成品茶水浸出物含量在42.23%~44.28%之间;茶多酚含量均普遍较高,在30.12%~31.18%之间;而咖啡碱含量普遍偏低,在2.18%~2.48%之间,没有显著差异;游离氨基酸含量赣茶2号最高,为3.84%;儿茶素总量差异显著,在8.04%~9.45%之间。从生化成分测定和感官审评结果可以看出翠峰和上梅洲所制婺源茗眉茶品质最好,是最适宜制作婺源茗眉的茶树品种。There were five kinds of Wuyuan Mingmei green tea processed by the two local varieties in Wuyuan area of Shangmeizhou and local groups and the three introduced varieties of Cuifeng,Yingshuang,Gan tea 2.Then,it was used as the test material to conduct sensory evaluation and biochemical components analysis in order to understand the suitability and quality between defferent varieties of Wuyuan Ming Mei green tea to provide a theoretical basis for the selection and promotion of Wuyuan Ming Mei green tea. The results of sensory evaluation showed that the total score of Cuifeng was the highest and the quality was the best,followed by Shangmeizhou,Gan tea 2,local groups,Yinshuang. The results showed that the contents of water extract were between 42.23 % and 44.28 %. The contents of tea polyphenols were generally higher between 30.12 % and31.18 %. While the contents of caffeine were generally lower,it was between 2.18 % and 2.48 % and there was no obvious difference. The contents of free amino acid in Gan tea 2 was the highest as 3.84 %. The total catechins were between 8.04 % and 9.45 % and there was no significant difference. Cuifeng and Shangmeizhou were two varieties suitable for process to Wuyuan Ming Mei green tea.
