摘　　要：通过模拟优质老窖泥中微生物生长、代谢环境和营养条件,采用现代微生物育种技术,扩大培养己酸菌等有益功能菌,培养人工老窖泥,应用于生产,医治和改造老化窖泥,使之能在较短时间内产出好酒。The artificial aged pit mud was cultured by the simulation of the nutritional conditions and environments for the growth and metabolization of microbes in quality aged pit mud and by the application of modern microbe breeding techniques for scale culture of function bacteria such as caproic acid-producing bacteria etc.And the artificial aged pit mud were applied in the production,cure and reconstruction of aged pit mud so that the production of quality liquor could be ensured in short time.(Tran.by YUE Yang)
