泥炭在窖池养护中的应用

摘　　要：窖泥与浓香型大曲酒生产之间关系十分密切,窖泥质量的优劣决定着浓香型大曲酒质量的高低,而长时间使用的窖泥因诸多因素会出现窖泥退化,故需要采取一定的措施进行窖池养护。各排次窖池翻底添加不同量的泥炭用于窖池养护,可使窖泥水分平均提高1.5个百分点,腐殖质含量平均提高1.3个百分点,己酸菌数量平均提高2.1×10~5个/g,实验窖池所产原酒中己酸乙酯含量平均提高40.10 mg/100 mL,优级酒率平均提高1.93个百分点,其中泥炭添加量为15 kg的试验池口,各项指标提高幅度最大,显示了泥炭用于窖池养护,在延缓窖泥老化及提高窖池所产优级酒产量及理化指标方面的优化作用,是对浓香型白酒窖池养护的新探索与尝试。Pit mud is closely related to the production of Nongxiang Daqu Baijiu.Pit mud quality determines the quality of Nongxiang Daqu Baijiu.Pit mud degradation will occur after long-term use.Accordingly,pit maintenance is necessary.Different amounts of peat soil were added in each production cycle for bottom pit maintenance which could increase pit mud moisture content by 1.5%,humus content by 1.3%,caproate bacteria amount by 2.1×105/g on average.After pit maintenance,the average content of ethyl caproate in the produced base liquor increased by 40.10 mg/100 mL,top quality liquor rate increased by an average of 1.93%.The experimental results suggested that the adding amount of peat soil of 15 kg could achieve the best effects.The study was the new exploration and try for the maintenance of pit of Nongxiang Daqu Baijiu.
