摘  要:随着我国国民健康意识的提升,饮食营养越来越受到政府和人们的重视。微生物制品包括食用菌、菌体蛋白、发酵食品以及益生菌剂等,不仅具有独特的风味,还含有丰富且易吸收的营养物质。此外,微生物制品还提供了多种对人体有益的生理活性物质,这类物质能够调整人体代谢,有助于改善机体消化、神经和免疫系统,从而增强机体免疫力,并且可以预防和治疗某些疾病。对常见的微生物制品及其对人体的营养价值和保健功效进行了介绍,并对我国微生物制品的市场现状和发展趋势进行了简单介绍和讨论。With the raising of national health consciousness,dietary nutrition has attracted great attentions of our government and citizens.Microbial products includes edible fungi,microbial proteins,fermented foods and probiotics.This type of foods own their unique flavors and are rich in easily absorbed nutrition.It also provides a variety of physiological active substances which participate in the regulation of human metabolism and improve our digestive,nervous and immune systems.Therefore,microbial products are widely used in enhancing body immunity and the prevention and treatment of some diseases.In this study,we reviewed the common microbial products and their effects on human health.In addition,the situation and development of microbial products in China were briefly introduced and discussed.
