摘 要:[目的]优化壳聚糖基复合茶多酚衍生物涂膜保鲜技术,为食用菌产后安全贮藏保鲜提供理论依据。[方法]以壳聚糖为基体、以茶多酚为功能性添加剂制取不同浓度配比的壳聚糖基复合涂膜剂对平菇进行涂膜保鲜,然后比较其对平菇颜色、形态、硬度和气味的影响。[结果]通过综合分析复合涂膜剂的保鲜效果,得到最佳配方组合:壳聚糖质量∶茶多酚质量为5∶1。[结论]茶多酚能显著提高壳聚糖复合膜的抗氧化能力,且随着茶多酚浓度的增加,复合膜的抗氧化能力逐渐增强,但是茶多酚浓度过高并不利于平菇保鲜。[Objective]The technology of chitosan complex tea polyphenol derivative film preservation was optimized.It provided theoretical basis for safe storage and preservation of edible fungi after delivery.[Method]Pleurotus ostreatus was treated with chitosan as substrate and tea polyphenol as functional additive.The color,shape,hardness and odor were measured and compared.[Result]The optimal formula combination was obtained by analyzing the effect of composite coating agent:the quality of chitosan/the quality of tea polyphenols=5 ∶1.[Conclusion]Tea polyphenols could significantly increase the antioxidant capacity of the chitosan composite membrane.As the concentration of tea polyphenols increased,the antioxidant capacity of the composite membrane increased gradually,but the high concentration of tea polyphenols was not conducive to the preservation of Pleurotus ostreatus.
