摘  要:以葡萄酿酒皮渣为原料,研究葡萄籽油超临界CO2萃取技术以及葡萄籽油微胶囊的制备。结果表明:随着萃取压力、萃取时间的增加,葡萄籽油的萃取率显著提高;随着萃取温度、粉碎粒度的增加,葡萄籽油的萃取率先显著增加后显著降低。采用锐孔法制备葡萄籽油微胶囊产品,最佳工艺参数为:海藻酸钠质量分数为3.2%,CaCl2浓度为5%,芯壁比1∶6(g/g),壳聚糖浓度0.8%。最佳工艺条件下锐孔法制备微胶囊的包埋率为84%,微胶囊化有助于提高葡萄籽油的稳定性。Taking the grape pomace as raw materials,this paper studied the supercritical CO2 extraction technology of grape seed oil and microencapsulation.The results showed that the extraction rate increased significantly with the increase of extraction pressure and time.As the extraction temperature and crushing particle size increased,the extraction rate increased obviously in the first stage and then decreased remarkably in the last stage.The orifice method was used to prepare grape seed oil microcapsule.The optimum process parameters were as follows:3.2%of sodium alginate concentration,5%of CaCl2 concentration,(1:6)(g/g)ratio of core to wall and 0.8%chitosan concentration.The microcapsule embedding rate was 84%under the optimum conditions.The microencapsulation could improve the stability of grape seed oil.
