摘  要:探讨了不同类型保鲜袋对杏鲍菇(Pleurotus eryngii)贮藏保鲜的影响,对贮藏过程中杏鲍菇的失重率、细胞膜渗透率、白度值、质构曲线、硬度等指标进行了测定。在2℃贮藏杏鲍菇的过程中使用不同的保鲜袋,贮藏49 d时杏鲍菇失重率均低于1%。在贮藏过程中,各处理组杏鲍菇的细胞膜渗透率整体呈现逐渐上升的趋势。其中,贮藏后期其细胞膜渗透率的增大速率比贮藏前期要快;在28 d内的贮藏过程中,高阻隔袋贮藏的杏鲍菇硬度仍在500 g以上,贮藏30 d时其白度值L为75.50。高阻隔纳米袋贮藏杏鲍菇具有明显优势,商品贮藏期可达30 d左右。The influences of different types of fresh-keeping bags on storage stability of Pleurotus eryngii were investigated. The weightlessness rate, cell membrane permeate rate, whiteness values, texture curve and hardness of P. eryngii were determined during the storage periods. The P. eryngii packed in all kinds of storage bags showed the uniform tendency, and the weightlessness rate was below 1% during the storage period of 49 days at 2%. The cell membrane permeate rate of P. eryngii in each treatment group increased gradually, the rate of which at the latter stage of storage increased faster than that at early storage stage. The hardness of the P. eryngii stored in the high barrier bag was still above 500 g during the storage period of 28 days, and the whiteness value L was 75.50 during the storage period of 30 days. The high barrier nanometer-bags have an obvious advantage on storing P. eryngii, and the storage period of P. eryngii packed in this type of bags were about 30 days.
