摘 要:为了解新疆主要干果的营养品质及抗氧化能力,选取新疆常见的12种干果,对其水分、葡萄糖、果糖、蔗糖、有机酸、总黄酮、总酚及抗氧化活性进行分析。结果表明,新疆干果种类和品种间均存在显著差异(P<0.05)。新疆干果水分含量普遍偏低,除骏枣(23.11%)和灰枣(19.37%)外,其余10种干果的水分含量均在14%以下;在营养品质方面,12种干果的主要营养成分含量:果糖114.28~540.67 mg/g DW,葡萄糖103.20~286.04 mg/g DW,蔗糖13.07~350.79,总糖388.67~826.71 mg/g DW,总酸6.56~19.01 mg/g DW,总黄酮0.39~3.04 mg RE/g,总酚0.56~0.73 mg GAE/g,其中7种葡萄干的果糖、葡萄糖、总糖、酒石酸、总酸、总黄酮含量高,骏枣和灰枣中蔗糖、总酚含量高,吊干杏中苹果酸、柠檬酸含量高;在抗氧能力方面,12种干果的抗氧化能力为:DPPH 2.65~9.75μmol TE/g,ABTS 8.22~51.82μmol TE/g,FARP 5.01~40.52μmol TE/g,ORAC 32.36~76.16μmol TE/g,其中黄提、黑加仑、吊干杏和小无花果的DPPH、FARP和ORAC较高,而骏枣和灰枣的ABTS较高。In order to understand nutritional and antioxidant property of main dried fruits in Xinjiang,twelve dried fruits were chosen as experiment material,and their contents of moisture,fructose,glucose,sucrose,organic acids,total flavonoids and total phenols as well as antioxidant capability were analyzed.The results showed that there was difference among the species and varieties of dried fruits(P<0.05).The moisture contents were very low,except for Ziziphus Jujuba.cv.Junzao(23.11%)and Ziziphus Jujuba.cv.Huizao(19.37%),the moisture contents of other 10 dried fruits were below 14%.As to the respect of nutrition,among these 12 species of dried fruits,fructose content ranged from 114.28 mg/g DW to 540.67 mg/g DW,and glucose content ranged from 103.20 mg/g DW to 286.04 mg/g DW,and sucrose content ranged from 13.07 mg/g DW to 350.79 mg/g DW,and total sugar ranged from 388.67 mg/g DW to 826.71 mg/g DW,and total acid ranged from 6.56 mg/g DW to 19.01 mg/g DW,and total flavonoids content ranged from 0.39 mg/g DW to 3.04 mg RE/g,and total phenols content ranged from 0.56 mg/g DW to 0.73 mg GAE/g,and 7 raisins were rich in fructose,glucose,total sugar,tartaric acid,and Ziziphus Jujuba.cv.Junzao and Ziziphus Jujuba.cv.Huizao were rich in sucrose and total phenols,and dried apricot was rich in malic acid and citric acid.As to the respect of antioxidant capability,among these 12 species of dried fruits,DPPH ranged from 2.65μmol TE/g to 9.75μmol TE/g,and ABTS ranged from 8.22μmol TE/g to 51.82μmol TE/g,and FARP ranged from 5.01~40.52μmol TE/g,and ORAC ranged from 32.36μmol TE/g to 76.16μmol TE/g,and the value of DPPH,FARP and ORAC of golden Thompson seedless raisin,black Monukka raisin,dried apricot and small dried fig were much high,and the ABTS values of Ziziphus Jujuba.cv.Junzao and Jujuba.cv.Huizao were much high.
