摘 要:银耳多糖具有抗肿瘤、降血糖、抗氧化等作用。其干燥方式众多,探讨银耳多糖的喷雾干燥工艺,通过对银耳多糖浓度、进风温度、进料流量等因素的分析,以银耳多糖含水量及干粉得率为指标进行工艺优化。结果表明,银耳多糖浓度、进风温度、进料流量各因素对银耳多糖的干燥有极显著影响(p<0.01),最佳喷雾干燥条件为:银耳多糖浓度1.9%、进风温度170℃、进料流量17 mL/min。在此条件下,含水量为4.08%,干粉得率为63.41%。Tremella polysaccharide had antitumor, hypoglycemia, antioxidation and so on. There were many dry methods of Tremella polysaccharide. The polysaccharide in Tremella used as the raw material, through the analysis of polysaccharide concentration, inlet air temperature and feed flow factors, the process optimization design was carried out based on the content of polysaccharide in Tremella and the yield of dry powder. The results showed that the concentration of Tremella polysaccharide,inlet air temperature, feed flow rate of each factor of Tremella polysaccharide dry had significant effects(p<0.01);the optimum spray drying conditions was Tremella polysaccharide concentration 1.9%, inlet air temperature of 170 ℃, feed flow rate 17 m L/min. Under this optimized condition, the moisture of the polysaccharide solution spray drying was 4.08%, and the dry powder yield was 63.41%.
